Jamun Ingredients:
Grated Mawa/Khoya-1 1/2 cups
All purpose flour-4 tsp
Sugar- 5 tsp
Cooking soda-1/4 tsp
Warm Milk-1/4 cup
ghee / oil for deep fry
For stuff: (optional)
Grated mawa-1/2 cup
sugar 2 tsp
dry fruits powder(pistachios,almond,cashew)-2 tsp
warm milk-3 tsp
any food color -pinch
Sugar Syrup Ingredients:
Sugar-1 1/2cups
water-2 cups
cardamom powder-1/2 tsp
Method :
First combine all jamun ingredients,mix well and make a soft dough.for stuff first melt the food color in warm milk and combine with remain stuff ingredients ,make a soft dough.let the dough rest for 15 mins.
now prepare the sugar syrup.In a bowl dissolve the sugar in water,and boil on medium flame.
then simmer the flame,bring the syrup to 1 string consistency.to know this with a spoon take the small amount of syrup and touch with index finger and thumb if it is sticky then turn off the flame.it takes approx 20 to 25 mins.keep this sugar syrup warm.
mean time take the dough into hands and knead the dough well.if u knead the dough very well u well get smooth jamuns.divide the into equal size.first make the small balls out of the color dough rolling between palms.
then take the plain dough and make into flat shape then put color dough ball and close it.
make desired shape.the shape should have no crack other wise the jamun will crack while frying.
In a skillet heat the oil on low flame.To know whether the oil is ready or not ,drop small piece of dough when it is come up very fast.then oil is hot.then reduce the flame.if the dough come up very slowly on oil ,this heat is enough to fry.drop the 4 or 5 jamuns in oil .
soak them for at least 1 hr.serve them.
