Simple Naan(with out yeast)


Ingredients:
 All purpose flour-2 1/2cups
 curd-1/2 cup
 warm milk-1/2 cup
 baking powder-1/2 tsp
 baking soda-1/2 tsp
 sugar-1/2 tsp
 salt to taste
 butter 5 tsp
Method:
sift the flour into bowl add baking soda,powder,salt,sugar ,melted butter  mix well.make well in the middle of the flour.then pour the  milk and curd in center of the flour and mix well and  knead lightly.make a soft dough.cover with towel and leave it for at least 3 hrs.now knead the dough well and  make equal size balls. dust the balls with flour.on flat surface roll the balls into oval shape about 1/2 inch thickness.heat the pan and fry the naan then it has bubbles turned into golden color.fry the same another side till it turns into light golden color.apply ghee or butter on both side.serve hot.

Aloo Gobi Version1

This is the dry version of aloo gobi.

Ingredients:
Cauliflower florets -2 cups
Aloo /potato -2 medium sized cut into cubes
green chillies-4 cut into length wise
chopped onion-1 medium sized
bay leaves-2
garam masala-1 tsp
corainder powder-1 tsp
cumin powder-1 tsp
red chilly powder-1 tsp
amchur powder-1 tsp or lemon -1
ginger garlic paste-1 tsp
curry leaves-2 springs
coriander leaves
butter-2 tsp
for seasoning:
vegetable oil-2 tsp
cumin seeds, coriander seeds,mustard seeds-1 tsp
Method:
   heat the oil in a wide pan add seasonings when it spluttering add bay leaves ,green chilies,ginger garlic paste.saute for few mins.then add onions and curry leaves fry till onions leave raw smell.now add turmeric powder,garam masala,cumin powder,coriander powder.saute them well ,at this time add butter.stir them well.now add potato cubes.fry for few mins,then add cauliflower florets fry and stir well,then potato and cauliflower will  observe all the spices.now cover the lid and cook about 15mins on medium flame.no need to add the water.if it is very dry then sprinkle few water it.cook till the aloo and cauliflower turns tender.thenadd amchur powder or lemon to it,stir well.turn off the flame.transfer into bowl garnish with coriander leaves.

pulihora/pulusu annam/tamarind rice and instant pulihora mix


Pulihora is my favorite recipe.this is traditional recipe in south India.In most of the Telugu festivals pullihora is main recipe.In Telugu Puli means pulupu(sour) and hor means cooked rice. whenever I go picnic or long journey trip I prepare pulihora.once I prepare pulihora pulusu(tamarind paste) and I keep it in fridge for long time.This is used like instant mix.
Ingredients:
   for pulusu/tamarind paste
         tamarind -200 gms
         salt -25gms
         red chilly -3/4 cup
         curry leaves-10 strings
         coriander seeds-1/4 cup
         cumin seeds-1/4 cup
         mustard seeds-3 tsp
         turmeric powder-2 tsp
         asafoetida-1/4tsp(optional)
         jaggery or brown sugar-1 tsp(optional)
         vegetable oil-5 tsp
for hora/rice:
       cooked rice -2 cups(each grain should be separate)
       green chillies-5-6 slit into length wise
       curry leaves-2 strings
       peanuts-2 tsp
       chana dal-2tsp
Pulusu preparation:
 This pulusu process take total 45 mins to1 hr.first soak the tamarind in less warm water about 30 mins or put it in microwave about 5 mins,cool down it and get the pulp.prepare 3 cups of tamarind extract from the tamarind pulp.make sure the extract should be thick but not too thick.heat oil in  skillet add few coriander,cumin,mustard seeds.add 3 strings of curry leaves and turmeric powder.saute for few seconds.then add tamarind extract.
cook about 15 mins,then add red chillies and salt to it.cook for another 20 mins.
mean time in pan fry coriander,cumin,mustard seeds separately and ,fry remaining curry leaves(7 strings) in 1/2 tsp of oil till they become crunchy.cool down them.In a blender combine all and make them into fine powder.add this powder to cooking tamarind pulp.
stir it well,cook another 20 to 30 mins.at this time add asafoetida and jaggery.
cook till the moisture evaporates and it leaves raw smell.turn off the flame.cool down it and transfer it into container. and it will become thick.
keep it in fridge.it will store for long time about 4 to 6 months but don't touch the water. we can use it as instant pulihora mix.
Tamarind Rice Preparation:
Take the cooked rice in a wide bowl or plate,add 2 scoops ( or according to your taste)of tamarind paste(pulusu)  to rice.
mix it well.
heat oil in a pan add chana dal and pea nut fry till the turned into light golden color then add green chillies,curry leaves saute for few mins.add this fried seasoning to rice(pulusu mixed rice).
Mix it well.tamarind rice is ready to eat.let it sit for 2 to 3 hrs then rice will observe all the flavours.

Tomato for face

 Tomato is a delicious vegetable.It is also used in beauty care.Tomato has several qualities that getting a good complexion.it contain high level vitamin 'C' and 'A', antioxidants.It is a good treatment for acne.it is also work as astringent.Here I described some of the facials with Tomato.

Apply tomato pulp gently on the face. leave this for an hour.then rinse off.It will help to get good complexion.It will also cure pimples in short time.


mix tomato juice and cucumber juice in equal ratio,apply this to face  with a cotton ball.let it sit for 30 mins.then rinse off.it work as astringent for oil skin.

mash 1 small tomato and 1 small avocado ,mix together.apply onto face.rinse after 30 mins.it is good for combination skin.it reduce blackheads and oiliness.


2 tsp of tomato juice and 1 tsp of honey ,mix together.apply on to  face and neck. leave it for 15 mins.then wash with warm water.it well reduce dead skin and  will get bright skin.


Mix the tomato pulp with 2 tsp yogurt.spread this onto face.leave it for 25 mins.then wash with chick pea flour.It is a cooling mask.


rub 1 tomato slice on blackheads.let it sit for 1 hr.it helps to remove blackheads.


dip a cotton ball in tomato juice.wipe with the cotton ball.after few mins.it works as cleanser.


To reduce pores.mix 1 tsp of tomato juice and 5 drops pf lime juice.rub with a cotton ball.leave it for 15 mins.then rinse off.

Bellam paramannam /sweet rice pudding

Bellam paramannam/annam payasam is the nivedyam for god in most Telugu festivals.Today is karthika pournami.I prepared paramannam to offer nivedyam for lord shiva,ganesha ,,...

Ingredients:
Basumati rice -1 cup
Milk - 4cups
Water-2 cups
grated jaggery-1cup
cashew nuts,raisins-1/4 cup
clarified butter/ghee-3 tsp
cardamom powder-1/4 tsp
Method:
  first wash and drain the rice.heat the ghee in a pressure cooker/any vessel  add raisins and cashews saute them till they turned into golden color.
now add the drained rice saute for few seconds
then add 2 cups of water and 2 cups of  milk
put the lid and cook for 3 or 4 whistles.if u r not using cooker then cook until rice is soft and the texture become thick.
 then turn off the stove.until few mins we can't open the  pressure cooker lid. then add cold water on the top of the lid and remove the whistle thus the remaining  pressure will be go, it is easy to open the lid.turn on the stove.add jaggery and remaining milk to it.

now add cardamom powder ,stir well.
cook about 2 to 5 mins.don't cook more than 5 mins.other wise the rice may split.
yummy paramannam is ready to serve.it serve  hot or cold .
