Rasmalai



Ingredients:
 For Malai:
     4 cups milk for paneer
     1 cup sugar
     3 cups water
     lemon
For Ras:
   3 cups milk for ras
   5 tsp sugar
For Garnishing:
   saffron
   almonds
   pistachios
Method:
   first in wide heavy bottom  pan boil the 3 cups of milk until it reduce 1 1/2 cup on low flame  to make ras.approximately this process takes 1 hr.in this process boil the milk on low flame and stir evenly to don't stick to the bottom.
mean while make the paneer.heat the 4 cups milk in a pan .bring them to biol .
to curdle the milk add lemon juice to it evenly and  stirring continuously.
after few mins greenish water and curd will separate.then turn off the stove and drain it into muslin cloth or any handkerchief.
at this time paneer will  so hot so pour some cold water on it and care fully squeeze the water.tie the paneer cloth and  hang it for 30 to 40 mins to drain reaming water.then open the cloth you get soft smooth dough.

kneed the dough and make smooth balls.
In a large bowl add 3 cups of water and 1 cup of sugar boil for few mins.

                                      
                      then add smooth balls to it boil for 5 to 10 mins.then the balls become double.
slowly take the balls from the hot water and drop them into cold water.

mean time check the ras may be ready. add sugar,saffron for ras and add pistachios,almond let it cool for few mins.
then take out the balls from cold water and add the ras to it.

garnish with pista and almonds.chill it and serve.

liked the way u have explained it...i always thought doing ras malai would be very difficult at home, but seeing urs would love to try it out at home this time...looks very delicious swapna...
