Semiya (vermicelli) pulihora

Ingredients :
semiya / vermicelli - 1 cup
Tamarind pulp / lemon juice - 3or 4 tsp
pea nuts - 1 tsp
chana dal - 1 tsp
green chilly- 2 or 3
red chilly-2
curry leaves - 1spring
turmeric powder- 1/4 tsp
hing - 1/4 tsp
oil - 2 tsp
coriander,cumin,mustard seeds-1 tsp
salt to taste
water - 2 or 3 cup
Method :
1.In a bowl add water,salt,turmeric powder bring to boil.then add vermicelli/semiya.cook for 3 to 5 mins.turn off the flame.strain them in a colander run under cold tap water through it to avoid sticking.
2.In a frying pan heat oil add coriander,cumin,mustard when they splutter,add chana dal,pea nuts fry till they turned to light golden color then add green chilly,red chilly,curry leaves saute for few mins add tamarind pulp or lemon juice cook for 3 or 4 mins till it leaves raw smell.
3.now add strained semiya to it mix and saute for few mins.

4.Turn off the flame serve hot.

Oats Dosa

Ingredients :
Oats(Quick cooked) - 1 cup
Rice flour or Wheat flour - 1/4 cup
Sooji / Semilona - 1/4 cup
Red chilly powder / green chilly paste-1 tbsp
Chopped Onion -1 medium sized
Minced Coriander
Salt to taste
Water-2 1/2 to 3 cups

Method :
1.I a microwave safe bowl add oats and add enough water,put it in microwave about 1 min.cool down it for 3 mins.or soak it in warm water for 10 to 15 mins.
2.In a blender add oats and blend into smooth paste.
3.In a mixing bowl add oats paste,wheat flour,sooji,chilly powder,salt mix well.and add water prepare the batter.the batter like dosa batter.
4.Heat the dosa pan on medium flame.Grease it,pour laddle full batter and with the help of laddle starting from the center,move the laddle in a circular motion and spread it in to circular shape.
5.On the top of dosa add onion and coriander leaves.press with spatula.spray oil .let it cook for 2 to 3 mins.Then slowly flip the dosa and let it cook for few more mins.Then remove it from the pan.

6.Serve hot with any chutney.

Chikkudu kaya Kudumulu / Indian Broad beans Steamed Rice Balls

This is my fav one.and this recipe bring back to my childhood memories.In my child hood day my grandma used to grow broad beans plants.I used to pluck these beans from plant and requested to mom for 
make this kudumulu..These were very tasty with fresh beans.
Ingredients :
Rice  Flour - 1 1/2 cup
Chikkudu kaya / Indian Broad Beans-8 oz
Salt - to taste
Spring onion-1 bunch(optional)
Method :
1.In a bowl add broad beans and enough water and bring it to boil and cook for few mins till beans become soft.
2.In another bowl add rice flour ,spring onion and cooked beans along with water.Carefully mix well with a spatula.
3.cool down it for 5 to10 mins.Don't leave it for more than 10 mins.it become hard.Make a soft dough.
4.Add water and bring to boil in a idly maker(steaming bowl).
5.Now make small balls with the dough.and press in center with thumb make the shape as shown in the picture.
6.Grease the idly plate and put in the steaming bowl.add the balls,close the lid and cook for 15 to 20 mins.
7.After that remove the lid and cool down for couple of mins.Take them into plate and grease them,other wise it would be sticky.
8.Serve with onion chutney or any pickle.
Tip :
Can also add green chilly paste.then serve with ghee or vegetable oil.

Uppudu Pindi / Rice flour upma

Uppudu pindi is also called uppu pindi or uppidi pindi.Uppudu pindi made with rice flour or rice ravva(grounded rice) or sooji.preparation of uppudu pindi is similar to upma,but have little variation.This is also called rice flour upma.This can be prepared as break fast or lunch or dinner.

Ingredients :
Rice flour / rice ravva / sooji - 1 cup
Water - 1 1/2 cup
Chana dal - 1 tsp
Pea nuts- 1 tsp
Onion - 1 medium size
Green chilly-3 to 4
Red chilly -2 to 3
hing-pinch
Curry leaves- 1 spring
Coriander leaves - few
Vegetable oil/Ghee/Butter-2 tsp
cumin , mustard seeds - 1tsp
Salt to taste
Method :
Heat the oil in wide pan.add cumin,mustard seeds.when it splutter add chana dal and peanuts fry till they turned into golden color.add chillies,chopped onion,curry leaves.saute for few mins till onion leaves raw smell.
add water,salt hing.Bring it to boil.
then add rice flour.
with spatula mix well.
here lot of lumps will form.now add 1 tsp of oil or ghee on the top of the flour.mix,stir well.
cover the lid and cook for 15 to 25 mins on low flame.To void sticking to the bottom of the pan stir sometime while it's cooking.
cook,stir till all the lumps separated.
serve hot with any pickle.

Sabudana (sago) Khichidi / Sabudana Upma

Ingredients :
Sabudana (sago) - 1 cup
Urad dal-1 tp
Pea nuts-1 tsp
Cashews-1 tsp
Green chilly-2
Red chilly-1
Chopped Onion - 1
Boiled & peeled & cubed Potato-1
Curry leaves-1 spring
Vegetable oil-2 tsp
Hing /asafotedia -1 pinch
salt to taste
Lemon juice-2 tsp
Coriander leaves - few
For seasoning:
Mustard, coriander,cumin seeds-1 tsp
Method :
Wash the sabudana and soak about 30 to 40 mins.Then rinse them and drain out the water here all the powder also drain out.In a water drainer Drain them for over night or min 5 to 6 hrs.After that Sabudana become very soft and smooth.
Heat the oil in a skillet add seasoning ingredients when they splutter add urad dal and pea nuts,cashews fry them until they turned into golden color
 then add red chilly,green chilly and chopped onions ,curry leaves saute for till they leave raw smell.then add boiled potato stir well.add salt and hing mix well.
then add drained sabudana stir till they observe all the spices.
Garnish with coriander leaves and add lemon juice.
sabudana khichidi is ready to eat...serve hot with any pickle or chutney.

Rava Idli

Ingredients :
semilona/sooji/upma ravva-1 cup
green chilly-3
chopped onion-1
grated carrot-1
chana dal-1 tsp
urad dal-1 tsp
cashews-1 tsp
curry leaves-1 spring
ginger garlic paste-1/2 tsp
yogurt-1 cup
water -1 cup
few chopped coriander leaves
salt to taste
mustard,cumin, coriander seeds-1 tsp
butter/ghee-2 tsp
for garnishing :
  roasted cashews(optional)
  tomato slices
  grated carrot
  coriander leaves
Method :
Heat the ghee in a skillt add mustard,cumin,coriander seeds when it splutter add chana,urad dal,cashews fry till they turned into light golden color.
then add onions,ginger garlic paste.fry well,then add curry leaves, grated carrot and corainder leaves saute for 2 mins.
                                      
then add sooji for few mins until nice aroma comes.turn off the flame.
let it cool.in a bowl add yogurt beat well then add water,salt and  mix well.then add roasted sooji to yogurt.then mix well.
let sit for 30 mins.Boil water in idli steamer.grease the idli plates put one tomato slice and remaining garnishing ingredients,pour the rava yogurt mixture over the garnishing ingredients.
put the idli plates in steamer.steam about 10 to 15 mins.
then turn off the flame let it cool for 10 mins.remove the rava idlis carefully with a spatula.serve hot with any chutney.

Simple Upma



Ingredients:
Sooji/ravva (semilona)-1 cup
cashew nuts-1/4 cup
urad dal ,pea nute-1/4 cup
green chilly -3 cut into round shape
red chilly-2
onion chopped -1
ghee/butter-3 tsp
chopped ginger--1/2 tsp
curry leaves-few
chopped coriander leaves-few
salt -to taste
water-3 cups
lemon
Method:

first sift the sooji with fine sieve.in pan fry the sooji for few mins till the rava turn into light golden color.put a side.now the heat the ghee in a pan add mustard seed, coriander seeds, cumin seeds.when it spluttering add urad dal and pea nuts saute for few mins.then add cashew nuts fry for few seconds till they turned light golden color.then add red chillies saute few mins.add green chillies fry for mins.

then add onions ,ginger fry till they leaves raw smell.
now add water and salt.cover the lid.let it boil at medium flame.
when the water boils add sooji gradually.stir continuously make and sure do not form the lumps.
simmer the stove.let it cook for 5 mins till it become thick.turn off the stove.simple upma is ready to have.serve hot.sprinkle the lemon on the top of upma.and also serve with pickle.
