Aloo paratha/potato stuffed flat bread


Ingredients:
for dough
  Whole wheat flour-2 cups
  water-1/2 cup
  salt-1 tsp
  oil-2tsp
stuffing
  potato-2 nos
  green chilly paste-1 tsp
  coriander powder-1/2 tsp
  cumin powder-1/2 tsp
  lemon juice -2 tsp
  chat masala/garam masala-1/2 tsp
  vegetable oil-2 tsp
  salt -to taste
  coriander leaves
  spring onion
  you can add any spices according to your taste.
Method:
first prepare the dough for paratha.In a bowl take flour add oil and salt to the flour,mix it well.

then add water to it knead it well and make a soft dough.rest it for 20 to 30 mins.then the parathas will more soft.

for stuffing remove the peel for potato and cut into cube.In a microwave safe bowl add water and potato cubes cook them in microwave about 7 mins.

then remove from microwave and drain the water let it them for cool.then mash them with masher.

heat the oil in a pan add coriander powder,cumin powder,green chilly paste fry for 2 mins ,then add chopped spring onions,coriander leaves,salt.saute them for minutes till they leaves raw smell.at last salt.here u can add your own spices like garam masala,chat masala etc..now add mashed potato's.stir them well.when mashed potato's observe all spices pour the lemon juice on the top of it.mix it well .turn off the stove.let it cool.

mean time.take the dough make small equal size balls.if u don't getting equal sized balls.just roll the dough take a knife cut into equal parts then make lemon sized balls .



then u will get equal size balls.if the potato stuffing cool make equal balls as size of dough balls.

roll the balls into circles with rolling pin at flat surfaceor with hand into 3 or 2 inches diameter.

make sure the edges should be thin than middle of the dough circle.because we have to close the edges.take the potato ball and put into middle of the circle .

carefully close the all sides by  pulling the edges and sick together.if the edges are not stick touch the water to the edges before closing.

stuff remaining balls like this.

take one stuffed ball apply dry flour to both side then it don't stick.gently roll it into round shape with rolling pin.

while u rolling paratha u may get bubbles then take knife (or any sharp edge pin like tooth pick) press on the bubble.then the air will go.other wise it may tear and the stuff will come out.do like this to all stuffed balls.

heat the pan fry the paratha on both side till they turned into golden color.

serve hot with any pickle or curd or raitha.serve with raita will be more taste.

Coconut Milk Rice

Ingredients:
Basmati rice -2 cups
coconut milk (thick) -2 cups
water -2 cups
big onion -1
green chillies-5
curry leaves-few
garlic cloves-(optional)
carrot,peas,beans, -1/2 cup(optional)
cinnamon sticks-1
cloves-5 to 6
bay leaves-4
cardamom-6
cashew nuts-1/4 cup(optional)
garam masala-1/4 tsp
butter / ghee/vegetable oil-2tsp
salt-to taste
Method:
first wash the rice ,drain the water.then add coconut milk and water to the rice keep in electric rice cooker or pressure cooker.put a side.now chop the chillies,onions, carrots,beans .heat the butter or ghee in a skillet and add cloves,bay leaves,cardamom,cinnamon stick , cashew nuts saute for till cashe turns into light golden color.then green chillies,onions,carrots,beans,peas ,curry leaves,saute till they leaves raw smell.
then add garam masala,salt.saute for few minutes.
mean time turn on the cooker.if using pressure cooker don't put lid.when the rice starts cooking,,
add the above fried ingredients.
another way is also used to cook,when the ingredients done add rice saute for few mins then add coconut milk and water.but in this process the rice may broke.so I like to add fried ingredients to the rice when it cooking.
put the lid and cook till it change into warm mode.if using pressure cooker turn off after 3 whistles.
sweet and spicy coconut milk rice ready. serve when it hot.eat with any gravy,raita.
also u can use 4 cups of coconut milk then no need to add water.then it will give more sweetness.

Rasmalai



Ingredients:
 For Malai:
     4 cups milk for paneer
     1 cup sugar
     3 cups water
     lemon
For Ras:
   3 cups milk for ras
   5 tsp sugar
For Garnishing:
   saffron
   almonds
   pistachios
Method:
   first in wide heavy bottom  pan boil the 3 cups of milk until it reduce 1 1/2 cup on low flame  to make ras.approximately this process takes 1 hr.in this process boil the milk on low flame and stir evenly to don't stick to the bottom.
mean while make the paneer.heat the 4 cups milk in a pan .bring them to biol .
to curdle the milk add lemon juice to it evenly and  stirring continuously.
after few mins greenish water and curd will separate.then turn off the stove and drain it into muslin cloth or any handkerchief.
at this time paneer will  so hot so pour some cold water on it and care fully squeeze the water.tie the paneer cloth and  hang it for 30 to 40 mins to drain reaming water.then open the cloth you get soft smooth dough.

kneed the dough and make smooth balls.
In a large bowl add 3 cups of water and 1 cup of sugar boil for few mins.

                                      
                      then add smooth balls to it boil for 5 to 10 mins.then the balls become double.
slowly take the balls from the hot water and drop them into cold water.

mean time check the ras may be ready. add sugar,saffron for ras and add pistachios,almond let it cool for few mins.
then take out the balls from cold water and add the ras to it.

garnish with pista and almonds.chill it and serve.

Ingredients:
medium size strawberries-8 to 10
yogurt-1/2 cup
milk-1/2 cup
sugar -3 tsp
vanilla essence-1 tsp
Process:
first wash the strawberries and remove the leaves and cut them into pieces.
in a blender add crushed strawberries and remaining ingredients.blend  till smooth
take into glass,it will become creamy.chill it for few 30 mins or add ice to it .yummy smoothie ready to have.

Bellam appalu

This is the nivedhyam for any pooja.especially for Durga maa and at kedareeshwara vratham...
Ingredients:
wheat flour-1 cup
grated jaggery/bellam -1/4 to 1/2 cup
cardmom powder -pinch
water
ghee or vegetable oil for deep fry
first add the few water to jaggery don't add too much water.melt the jaggery in water using microwave or on stove.or  also u can bring it to boil.

                                      
now add tthe jaggery water to wheat flour and add pinch of cardmom powder make a soft dough.
make small balls out of it.
Take one poly thin cover smear it with ghee and press the balls in round shape.
heat the oil in kadai when oil heats one by one drop them into oil.fry on medium flame until turns into brown color.
take them into tissue paper.it will observe excess oil.serve hot or cool.
