SarvaPindi is most popular snack in Telangana.Some of pepole called it as tapala attu or tapala chekka.It mean rice flour dough(pindi) pressed to dish or vessel (saruva,tapala).To make this dish
Ingredients as follows:
Rice flour - 2cups
Green chilly - 5 or 6
Sesame seeds - 3tsp
Chana Dal - 1/4 cup
Pea Nuts - 2 tsp
cumin seeds- 1tsp
Curry leaves -1 spring
chopped onions - 1cup
Green onion - 1 string(optional)
Ginger Garlic paste - 1 tsp
Salt - 1 tsp
Coriander leaves
Vegetable oil
Water -as needed
Directions:
Soak the chanadal and peanuts about 1 hr.Grind the chillies make into fine paste.Now take the rice flour into a bowl.Add seseme seeds,cumin sedds and ginger garlic paste salt.
Then add soaked chana dal and pea nuts remove from water,green chilly paste ,curry leaves, chopped onions,coriander leaves.Mix well. Add enough water and make soft dough.
To prepare this dish I used a separate bowl,the bowl is specially made for saruva pindi.But you can also use a non-stick cooking bowl.Now take the bowl and grease it with oil or ghee,take a hand full dough make a ball and press the ball with your fingers to all over bowl equally as not too thin not too thick(just little thicker than chapathi).Then after make 4 or 5 holes all over and add oil on top of it.
why we have to put holes on top ,because the oil will cook on the bottom part if not the bottom of saruva pindi will stick to the bowl and it burns on the bottom and do not cook the saruva pindi well.
Turn on the stove,put this non-stick bowl on the stove and cover the bowl with lid cook on medium flame about 15 to 20 mins.
Remove the lid after 15 mins and cook till saruvapindi separate from the bowl.
No need to cook on the top.remove the saruva pindi from the bowl .The saruva pindi is ready to eat.
It is like smooth on the top and the bottom is crispy.You can serve with ghee ,butter or curd.
Tips:
1. If u don't want the crispy saruva pindi you can add spinach. or also u can use onion paste instead of chopped onions.
2.U don't have time to soak chana dal in water just add roasted chana dal no need to soak the pea nuts in water.
